Healthy sweet and sour king prawn stir fry is great way to start a quick dinner recipe
Ingredients
- 300 g Pineapple tin or fresh - diced
- 1 unit Red Capsicum Diced 2x2cm
- 2 Cloves Garlic chopped
- 1-2 pcs Chilli chopped
- some to taste Seasalt
- 1 Thumb size Ginger
- 24 pcs King Prawn Peeled
- 3 tasp Canola Oil
- 3 tasp Rice vinegar
- 1 tasp Soy
- 1/2 tasp Corn flour with 2 tasp water
- some for garnish Fresh corriander
- 2 pcs Spring Onion Cut in 2cm
- 1 pcs Onion chopped
Directions
Step 1
Peel and diced the pineapple lengthways into 1x1 cm. Meanwhile, halve, deseed and finely slice the capsicum into 1x1cm as well.
Step 2
Peel the garlic and deseed the chillies. Peel, finely chop and add the ginger. Chopped them into small dices.
Step 3
Place the 1/2 chilli, ginger and garlic paste into a large bowl with the prawns and some canola oil, then mix well. Quickly fry the prawn for about 2 mins.
Step 4
Heat some oil in large wok or non-stick frying pan over a medium-high heat. Fry some of the garlic, chilli and ginger mixture. Add pineapple, capsicum and onion and cook them till they are soft.
Step 5
Add soy, vinegar and pineapple juice and cook the sauce till it reduced. Mix up the cornflour and water and pour into the sauce.
Step 6
Wait till it is thicken then remove the sauce. Add the prawn and stir them well.
