About this experience

Bake a full bakery table: country sourdough, rosemary focaccia, bánh mì rolls, scones, cinnamon scrolls and pineapple buns. Take home your own sourdough starter and a loaf to bake at home.

Bread & Baking Workshop

Fill a table with bread and baked goods you made yourself. In this full-day Bread & Baking Workshop you'll learn how wild yeast and fermentation work, how to read a dough, and how to shape and bake with a proper crust and soft crumb.

The Hero: A Bakery Table of Your Own

By the end of the day you'll have baked a country sourdough loaf, golden focaccia, crackly bánh mì rolls, buttery scones, cinnamon scrolls and soft pineapple buns. It's the kind of spread that anchors a long lunch or a weekend brunch. Sourdough runs on its own timeline, so your chef will have doughs ready at each stage. You'll mix and shape your own loaf to take home, and bake one that was started earlier.

The Bake List

  • Country sourdough loaf – mix, shape, score and bake
  • Rosemary & sea salt focaccia – easy enough for a weeknight dinner
  • Cinnamon scrolls with vanilla glaze
  • Pineapple buns – a soft milk bread with a crackly sweet top
  • Sourdough starter – how to feed it and keep it alive at home
  • Vietnamese bánh mì rolls – a thin, crackly crust and airy crumb, filled for lunch
  • Buttermilk scones – no yeast, ready in 20 minutes, with jam and cream

What You'll Learn

  • Feed, maintain and read a sourdough starter
  • Mix, stretch-and-fold and judge when a dough is ready
  • Shape a tight loaf and score it for oven spring
  • Work with enriched doughs for soft, sweet bakes
  • Plan your bakes around your week, including overnight proving
  • Bake a light, crackly bánh mì roll
  • Make quick, tender scones without yeast

What to Expect

  • Full-day, hands-on class – 10:00am to 4:00pm
  • Your own bench, with step-by-step guidance from an expert chef
  • Small group of up to 16 for plenty of one-on-one help
  • Premium Victorian flours, butter and dairy
  • Bánh mì lunch from your morning bake, then enjoy your bakes straight from the oven with tea, coffee or a glass of wine
  • Take home your own sourdough starter, a shaped loaf to bake at home and plenty of baked goods
  • Recipes to take home so you can bake it all again

This is Day 5 of The Confident Home Cook, but you can book it on its own.
